Recipe: Cheesy Egg-in-a-Cup

This is the easiest egg dish to whip up in 5 minutes when you want something a bit more than just eggs on their own, a bit brunch-ey, but without leaving your own kitchen.  

Ingredients

2 eggs

Spoon of basil pesto

Handful of grated cheddar cheese

Boil the eggs.  They'll be ready 3-4 mins after they start to boil.  Take them off the heat and let them cool for a few minutes.Remove the shells and stick them in a big mug.

Drop in a spoon of pesto like below, I find that a teaspoon is enough, but it depends on how much you like basil pesto.

With a knife and fork roughly chop up the eggs in the mug and add your grated cheese.  And that's pretty much it.  Quick and easy, and delicious!

Perfect with a mug of tea and bread and butter.
