Recipe: Prawn Cocktail Lettuce Cup
Left work a little earlier than usual and thought I'd make it in time to stop at Swan Oyster Depot. It's a little seafood joint about 5 mins from my place but I haven't gotten to eat there because of the long queues outside every Saturday. It featured on Anthony Bourdain's 'What to do in San Francisco' Travel Channel show. It's a small place, counter-only and always packed. Unfortunately I arrived too late to get a seat so I got a 1/4 lb of shrimp to take away and thought I'd knock up my own shrimp cocktail.
Prawn cocktail is the starter with Christmas dinner every year in the Bourke house and I'm always in charge of this dish. I use Jamie Oliver's recipe for the cocktail sauce, from Jamie's Dinners.
Here's what you need to try it for yourself.
1/4 lb of fresh shrimp
1 head of iceberg lettuce
2 large tablespoons of Mayo (ideally Hellmann's full fat)
3 large tablespoons of Ketchup (his recipe says 1, but I like it sweeter and tangier)
1 small drop of Brandy
Pinch of cayenne pepper
Squeeze of lemon
Mix your sauce ingredients together in a bowl until they're blended. Then spoon the sauce out over the shrimp. In the picture below I tried both a lettuce cup as a serving idea or you can serve in a glass on top of sliced icerberg lettuce.
A nice glass of white wine would be perfect with this little dish, but I had none to hand so a Peroni did just as well.
