Recipe: Pan-fried Salmon with Cucumber and Lemon Salsa

Simple and light salmon recipe from Bill Granger's book Easy.

Ingredients

4 salmon fillets with the skin on

4 tbsp olive oil

1 long cucumber, deseeded and thinly sliced

1 lemon, peeled and segmented

1 small red chilli, finely chopped

Small handful chopped mint

1/2 tsp caster sugar

2 garlic cloves, thinly sliced

250g spinach leaves

sesame oil, to drizzle

1.  Brush the salmon with olive oil and season all over with sea salt and freshly ground pepper.  Heat frying pan and sear salmon on each side for about 3 minutes

2.  For the salsa, mix cucumber, chilli, sugar, mint and lemon

3.  Heat remaining oil in frying pan on medium to high heat.  Fry garlic until golden brown, about 1 minute.  Add spinach and cook for about 2 minutes, until wilted.

4.  Divide spinach on the plates, place salmon on top, and add salsa.  Drizzle with sesame oil and serve.
