Recipe: Pasta with Spicy Chorizo and Tomato Sauce

Depending on the chorizo you make this with, this pasta dish can have a real kick.  I used a spicy chorizo from The Whole Hoggs in Slane, that I got at the Honest2Goodness market last Saturday in Glasnevin, and we were rosy-cheeked and a few degrees warmer when we finished.

Ingredients

25g Butter

500g Pasta

2 Tins of Tomatoes

250g Chorizo

100g Parmesan

1 Red Chilli

250ml Cream

Mixed Herbs

Method

Melt the butter on a hot pan.  Add the tomatoes and herbs and simmer for a few minutes until the tomatoes are soft.  Slice chorizo into rounds, or halfs or quarters if needed.  Add chorizo and chilli to the tomatoes.

Add pasta to boiling salted water.  Cook for 8-10 mins.  Drain, retaining a little of the pasta water (to add to the sauce if needed).

After 10 mins add the cream and allow to simmer for 5-8 mins.  

Stir the pasta into the sauce.  Top with grated parmesan and serve hot.
