Recipe: Quick Lunch Frittata

A very quick recipe for a frittata.  You can use anything in your fridge for this, ham, veggies, potatoes, cheese.  For this one I used potato, spring onion, salami and cheddar.

1.  Beat 6 eggs in a jug, add salt and pepper, and 3 tablespoons of water.

2.  Cut 2-3 potatoes in cubes and fry in a tablespoon of oil and tablespoon of butter until golden brown.

3.  Add sliced salami, thinly sliced spring onion and potato to the egg.  Pour egg mix onto a non-stick pan, sprinkle over cheese, and place under a grill on the highest heat for a few minutes until cheese starts to bubble.  Leave to set for 5 minutes and slice.
