Christmas Turkey & Trimmings
I'm usually open to trying new things, except with my Christmas dinner, there's no varying from tradition. Prawn cocktail for starter, followed by turkey, ham, celery, sprouts, carrots, roast & mash potatoes, gravy, cranberry sauce, and my Dad's sherry trifle for dessert ("there's not enough trifle in my sherry"). But I've just done a Christmas dinner for a client which gave me the chance to try out some new dishes that work well, so sharing some recipes here.

Frying sprouts for
This makes a thick chutney that will keep for months in a jar.
Roast potatoes. Parboil for 2 mins & let them steam dry or dry with a towel. Cover in a meat fat or oil & roast until crispy. Sprinkle with sea salt when cooked. If salt is added before cooking the skin sticks to the tray.

Sweet & tangy red cabbage with bramley apples
And turkey, roasted in the oven with a simple herb & onion stuffing.
