Recipe: Double Cheesy Mustard Chicken Wrapped in Bacon
My Dad started making this one a few years ago, and it's so easy to prepare and tasty it's become a staple when having people over. The ingredients are practically all in the title! I made it recently and had the chicken on its own, but for a full meal it's great with roasted veggies and mashed potato.
4 chicken breasts
12 streaky bacon rashers
2 spoons of wholegrain mustard
50g cheddar cheese
50g grated mozzarella
1. Heat oven to 200C/400F. In a mixing bowl mix the mustard and two cheeses.
2. Cut a slit into the side of each chicken, then stuff each one with a large spoon of the mustard and cheese mix.
3. Wrap each chicken breast with 3 streaky rashers. They should hold the chicken together, but not too tight.
Cook at 200C for about 25-30 mins until chicken is cooked, and bacon is nice and crispy. The cheese and mustard will have melted to a sauce so its soft on the inside, wrapped in the crispy bacon - absolutely delicious!
