New Week, New Kitchen
Last Thursday and Friday were hectic days of cooking so I was ready to head back home for the weekend. Before I left on Friday evening I was presented with a fab cake by the teachers for my birthday, which I packed in a box and set off on the road.

I arrived back on Sunday evening to Ballymaloe to a lovely welcome by the ladies in the Pink Cottage who had cleaned, cooked, baked and decorated before I got home. Amazing we've only known each other 3 weeks.
The girls have started to collect all of our creations on the shelf in the kitchen. We won't be short of jams or chutneys for the remainder of our stay.

After spending the first 3 weeks in Kitchen 1, it was time to move on to Kitchen 3. I'd heard it was a breath of fresh air, so I was looking forward to it. My teacher for the week is Florrie (below) who is so calm and patient. The atmosphere is Kitchen 3 is definitely more serene and not as intense as last week, loving it so far!
Florrie teaching us how to make the perfect 45 second omelette on Monday. The secret is a smoking hot pan, clarified butter that won't burn, pour in your egg mixture, tilt the pan 4 ways to let the eggs spread around the pan, then fold over on to the plate. The secret seems to be in the way that you hold the pan so that you can maneuver it fast and not awkwardly. We all took 3 attempts and we've been advised to keep practicing until they are the perfect colour and texture. That's my breakfast sorted for this week.
