Recipe: Crispy Garlic & Chilli Chicken Goujons
Very Quick Recipe:
Slice 4 chicken breasts into goujon style pieces.
Make a breadcrumb coating for the chicken by combining:
12 cream crackers
2 cloves of garlic
Thumb of ginger (about size of a large cube)
1 red chilli, finely chopped
Handful of flat leaf parsley
4 tbsp plain flour
Peel garlic, zest lemon, chop chilli, peel and grate ginger. Put crackers into a food processor with butter, garlic, parsley sprigs, lemon zest, chilli, ginger and salt and pepper. Blend until it has a breadcrumb consistency, then put all onto a plate.
Spread flour on another plate, and crack eggs into a bowl.
Now, dip chicken pieces into flour until coated on both sides, then the egg, and then into the crumbs. They should be completely coated with the crumbs.
Place the chicken pieces on a baking tray and cook for 15 mins on a medium heat, until they look golden and crispy. These can also be fried on a pan with olive oil for 5 mins each side.
Serve with lemon wedge, sprinkling of sea salt, and a fresh salad.
